Tortellini Caprese Pasta Salad is a delightful dish that is flavorful and satisfying with a taste reminiscent of the classic Caprese salad. This recipe is flavorful without being complicated, fresh and very filling.

What is Tortellini?

A diminutive of “torta”, which means pie in Italian, Tortellini are called so because they are filled just like little pies. Until we get the chance to go back to Italy, I’ll be enjoying a piece of Italy right at home with this recipe.

Tortellini can be found in most grocery stores in the freezer or dry pasta isle. I mean, how can you not love a cheese stuffed pasta? The best part is, you can make it ahead and enjoy it for days to come.

How to make Tortellini Caprese Pasta Salad.

This recipe is very simple, making it the perfect weeknight meal.

Tortellini

Small pasta filled with creamy cheese.

Cherry tomatoes

Any tomato on hand will work but there’s something special about cherry tomatoes and the sweetness they bring to a dish.

Mozzarella

What’s caprese without creamy mozzarella?

Basil

The herb of Italy. When possible, always choose fresh herbs, especially for pasta salads like this one. Fresh herbs offer a more vibrant flavor, aroma and nutritional benefit than dried. 

Olive oil

The quality of Olive oil matters for many reasons. Each bottle varies in terms of quality, flavor, production and processing methods. Always look for origin on the bottle.

Balsamic glaze

This is a thick reduction of balsamic vinegar. It adds the perfect sweet, tangy and tart finishing touch.

Sea salt

Almost all of my recipes call for the use of sea salt. It’s salt derived from evaporation of seawater. Sea salt also contains trace minerals of magnesium, potassium and calcium, contributing to its superior flavor and variety of colors.

How to store leftovers.

Transfer leftovers to an airtight container. Best served immediately but stores well up to three days in the refrigerator.

Ingredients
 
 

  • 16 ounces Tortellini
  • 10 ounces cherry tomatoes halved
  • 8 ounces mozzarella ciliegine "cherry size"
  • 1/2 cup fresh basil chiffon
  • 1/4 cup olive oil
  • Sea salt and freshly cracked black pepper to taste
  • Balsamic glaze for garnish

Instructions
 

  • Bring a large pot of water to boil and cook tortellini per package instructions. Drain, rinse with cold water and set aside.
  • While the tortellini cooks, chop the basil, tomatoes and mozzarella. You can keep the mozzarella balls whole or slice in half.
  • Combine all the ingredients together in a large serving bowl. Toss until evenly coated and mixed. Chill in the refrigerator. Before serving, garnish with additional fresh basil leaves, balsamic glaze and sea salt. Best served immediately.
