What is a McGriddle?

Everything is baked together in one mini muffin pan, giving you perfectly portioned mini McGriddle bites that are easy to grab and go. This recipe makes about 30 mini muffins.

What to serve with McGriddle Mini Muffin Bites

A typical breakfast spread works great with these easy mini muffins. Fresh fruit, hashbrowns, breakfast potatoes, yogurt, coffee or smoothies! 

Ingredients and substitutions

Pancake mix: Gives the muffins a subtle pancake flavor and a quick shortcut. 

Maple syrup: Natural sweetness in the muffin batter and for dipping.

Breakfast sausage:

Water or milk: Keeps the muffin bites tender and fluffy.

Egg: Adds protein and richness. 

Cheddar cheese: Pairs perfect with the sweet maple syrup and savory sausage. Adds protein and completes the flavors.

Make the sausage extra small

Crumble the sausage into small pieces. That way you get sausage in every bite.

Non-stick pan

Use a non-stick mini muffin pan. Grease it well to avoid the muffin tops getting stuck on the edges. 

Measure flour the right way

Measure flour by weight in grams instead of cups. Shop my exact scale here. (affiliate link) If you don’t have a scale, fluff the flour with a fork in its container, and then spoon it into the measuring cup before leveling off with a flat edge.  

How to make McGriddle Mini Muffins

Prepare the muffin pan

Preheat the oven to 400°F. Grease the mini muffin cups with butter or oil. 

Cook the sausage

In a medium bowl, add ground breakfast sausage and maple syrup. Mix well to combine. Cook sausage in skillet over medium heat until browned. Set aside.

Prepare the muffin batter

In a large bowl, whisk together pancake mix, water, egg and melted butter. Don’t overmix. A few clumps is fine.

Add the toppings

Fold in the cheddar cheese and cooked breakfast sausage until evenly distributed.

Fill the muffin pans

Spoon the mixture into the muffin pans, filling at least 3/4 of the way. For easy cleanup, use mini muffin liners. 

Drizzle maple syrup on top

Drizzle maple syrup over the top before baking.

Bake

Bake at 400°F for 12-15 minutes until browned and puffy. Drizzle maple syrup over the mini muffins while they are warm before serving.

Q: Can I make these mini muffins ahead of time?

A: Yes. Bake the muffins per instructions and allow them to cool completely. Transfer to a ziploc or airtight container in the fridge. Reheat in the microwave until warm. 

Q: How long do McGriddle Muffin Bites last in the fridge?

A: For best quality, store them in an airtight container in fridge and enjoy within 5 days. Freeze for longer use. 

Q: Can I use other cheeses or meat in the muffins?

A: Yes. Use spicy cheese, bacon, ham or skip the meat for a vegetarian option. Trust me, you can’t mess it up!

Q: Can I freeze leftover muffins?

A: Yes. Allow them to cool completely before freezing. Place them in a freezer safe ziploc or container seperating layers with parchment paper. Microwave from frozen until hot.

How to store leftover McGriddle Bites

Store leftover muffins in an airtight container or ziploc in the refrigerator for up to 5 days. Freeze for up to one month.

  • 2 cups pancake mix
  • 1 cup water
  • 1 large egg
  • 1 cup cheddar cheese shredded
  • 1/2 pound breakfast sausage
  • 2 Tablespoons maple syrup plus additional for drizzling and dipping
