Instructions
Prepare the muffin pan
Preheat the oven to 400°F. Grease the mini muffin cups with butter or oil or line with mini muffin liners.
Cook the sausage
In a medium bowl, add ground breakfast sausage and maple syrup. Mix well to combine. Cook sausage in skillet over medium heat until browned. Set aside.
Prepare the muffin batter
In a large bowl, whisk together pancake mix, water, egg and melted butter. Don't overmix. A few clumps is fine.
Add the toppings
Fold in the cheddar cheese and cooked breakfast sausage until evenly distributed.
Fill the muffin pans
Spoon the mixture into the muffin pans, filling at least 3/4 of the way. Don't forget to use a non-stick mini muffin pan and grease the insides. For easy cleanup, use mini muffin liners.
Drizzle maple syrup on top
Drizzle a teaspoon maple syrup over the tops of the muffins before baking.
Bake
Bake at 400°F for 12-15 minutes until browned and puffy. Drizzle maple syrup over the mini muffins while they are warm before serving. This recipe makes about 30 mini muffins.
