Mozzarella and Pepper jack cheese: Balances out the cream cheese.

How to make Jalapeno Popper Chicken

Prep the chicken

Cut chicken into small bite size pieces. To a medium heat skillet, add chicken and seasonings. Cook for 5-6 minutes until browned. Add onions and cook 1-2 minutes until translucent.

Make the sauce

Add cream cheese, jalapenos, green chilis, shredded cheeses and heavy cream. Stir until melted. Simmer for 10-15 minutes until thickened.

Serve & enjoy

Garnish with crispy bacon and jalapeno slices.

Control the heat

Remove jalapeno seeds for mild spice or keep them for extra heat.

Use softened cream cheese

To avoid lumps in the sauce and makes the melting step faster.

Ingredients
 

  • 4 large chicken breast, diced
  • 8 ounces / 1 pack cream cheese, softened
  • 3 fresh jalapenos, deseeded and diced
  • 1 cup heavy cream (or substitute with 1/2 cup broth)
  • 4 ounces / 1 can mild green chilis
  • 1 large yellow onion, diced
  • 2 Tablespoons butter
  • 1/2 cup cheddar cheese
  • 1/2 cup mozzarella cheese
  • 1 Tablespoon ranch seasoning

For garnish:

  • 1 jalapeno, sliced
  • 6 slices bacon

Instructions
 

Prep the chicken

  • Cut chicken into small bite size pieces.
  • To a medium heat skillet, add chicken and seasonings. Cook for 5-7 minutes until browned. Add onions and cook 1-2 minutes until soft and translucent.

Make the sauce

  • Add cream cheese, jalapenos, green chilis, shredded cheeses and heavy cream. Stir until melted. Simmer for 15-18 minutes until smooth, thickened and combined. You may substitute heavy cream for 1/2 cup broth and 1/2 cup heavy cream. You will need to simmer longer to thicken the sauce.

Serve & enjoy

  • In a skillet over medium heat, fry bacon until crispy. Slice jalapeno into thin pieces. Keep seeds for extra heat or remove for mild spice.
  • Garnish with crispy bacon and jalapeno slices.
