Fig and Brie Galette

Steal this appetizer idea next time you have guests over. Fig and Brie Galette is the perfect combination of sweet, savory, buttery and elegant all in one. This recipe features thinly sliced apples, creamy brie and DeLallo Fig Spread layered on top of crispy puff pastry. If fresh figs are out of season, use pears. This recipe is versatile and prefect for all seasonal fruit.

Ingredients and substitutions

Puff pastry: Store-bought puff pastry sheets are sold in the refrigerator or freezer section at your local grocery store. Both work fine for for this recipe. You may substitute for vegan or gluten-free puff pastry.

Brie cheese: Freeze Brie for 15 minutes before slicing for an easier cut. The rind is edible but you may remove it.

Fig spread: DeLallo Fig Spread is made with sun-ripened Greek Kalamata figs.It has a fruity and mild, honeyed sweetness. I can eat it by the spoonful, it’s sooo good. It enhances the flavor of the Brie.

Apples: Firm sweet-tart apples like Honeycrisp, Gala, Fuji or Pinky Lady work best. Avoid mushy varieties like Red Delicious. I used Gala.

Fresh figs: Adding fresh figs are more for aesthetic. If you find fresh figs are not in season anymore, that’s okay! With the sweetness from the fig spread, you are not missing out on that fig flavor.

How to make Fig and Brie Galette

Prepare the puff pastry

Preheat the oven to 425°F. Lay the puff pastry on a parchment lined baking sheet.

Add the fig spread

Spread a thin, even layer of DeLallo Fig Spread, leaving a one inch border clear around the puff pastry sheet.

Add the Brie

Add slices of Brie evenly over the fig spread.

Layer the apples

Arrange the thin slices of apples over the Brie.

Bake

Fold in the one inch border of the puff pastry towards the center, brush the edges with egg wash and bake for 20-22 minutes until puff and golden.

Handle puff pastry the right way

For best results, do not let the puff pastry reach room temperature. It still needs to be cold when working with it. Let it thaw in the refrigerator overnight.

Serve same day

To keep the puff pastry crispy and fresh, serve it the same day. 

Slice the apples thinly

This helps the apples cook evenly and quickly.

Can I make this galette in advance?

Absolutely. Assemble it ahead of time, cover with plastic wrap and refrigerate for up to 24 hours in advance. The apples may turn a little brown. Bake just before serving for best results.

Can I substiutute the ingredients?

Cheese substitutes: Camembert, triple cream cheese, cream cheese, Boursin, goat cheese, blue cheese.

Fruit substitutes: Pears, peaches, plums, apriocots.

Jam/spread substitutes: Apricot jam, rasphberry jam, strawberry preserve.

Savory add-ons: Prosciutto, caramelized onions, toasted walnuts, balsamic glaze.

How to store leftover Fig and Brie Galette

Even though leftover Apple, Brie and Fig Tart is still delicious, it won’t taste exactly like it did fresh from the oven. Puff pastry loses its crispiness as it absorbs moisture. Apples release juice over time, causing sogginess to the puff pastry. Store leftovers in the refrigerator and reheat in the oven at 350°F for 8-10 minutes until crispy and Brie is melted.

  • 1 sheet puff pastry thawed
  • 1 large Gala or honeybee apple thinly sliced
  • 4-5 ounces Brie cheese thinly sliced
  • 1/4 cup fig spread
  • 1 egg for the egg wash
  • Fresh thyme or oregano for garnish

  • Spread a thin, even layer of the fig spread, leaving a one inch border clear around the puff pastry sheet. Add slices of Brie evenly over the fig spread. Arrange the thin slices of apples over the Brie. Sprinkle with fresh oregano or thyme.
