Ingredients
 

  • 1 sheet puff pastry thawed
  • 1 large Gala or honeybee apple thinly sliced
  • 4-5 ounces Brie cheese thinly sliced
  • 1/4 cup fig spread
  • 1 egg for the egg wash
  • Fresh thyme or oregano for garnish

Instructions
 

Prepare the puff pastry

  • Preheat the oven to 425°F. Lay the puff pastry on a parchment lined baking sheet.

Add the fig spread, brie and apple slices

  • Spread a thin, even layer of the fig spread, leaving a one inch border clear around the puff pastry sheet. Add slices of Brie evenly over the fig spread. Arrange the thin slices of apples over the Brie. Sprinkle with fresh oregano or thyme.

Bake

  • Fold in the one inch border of the puff pastry towards the center, brush the edges with egg wash and bake for 20-22 minutes until puffy and golden.
