Bacon

Thin cut works best. Try to avoid thick cut.

Carrots

Choose carrots that are similar in thickness and size. Peel and trim the ends off. If the carrots are thick, cut them in half lengthwise.

Oregano and thyme

For garnish and freshness.

Hot honey

May substitute for maple syrup. I’ve tried both versions and both taste great!

It pairs well with a variety of main courses. Think traditional Thanksgiving and Christmas spread with Mashed Potatoes au Gratin, fresh salad and Soft Dinner Rolls

Yes! Simply wrap the bacon around the carrots and refrigerate until you’re ready to bake. It’s as easy as that.

How to make Hot Honey Bacon Wrapped Carrots.

Preheat the oven

Set your oven to 375°F. Line a baking tray with parchment paper and a baking rack on top for easy clean up. Shop my favorite baking sheet with rack here. (Affiliate link)

Prepare the carrots

Choose carrots that are similar in thickness and size. Peel and trim the ends off. If the carrots are thick, cut them in half lengthwise.

Wrap in bacon

Gently stretch out the bacon strip. Starting at the thick end, tightly wrap a slice of bacon around the carrot, slightly overlapping as you go. Place each wrapped carrot on the baking rack with the bacon seam side down. 

Bake

Bake for 30 minutes, then flip and brush all sides with hot honey. Continue baking for an additional 30-40 minutes until most of the bacon fat has rendered off. In the last 10 minutes, flip again and lightly brush again with hot honey. For extra crisp, broil each side for one minute at the very end but be mindful to avoid burning. Remove from the oven and garnish with fresh oregano, thyme and sea salt. 

Depending on the strength of your oven and how much fat is on your bacon slices, bake time may vary. It may take 15-20 minutes longer than the suggested bake time for the bacon fat to render off and crisp up.

Choose the right carrots

Use medium sized carrots that are similar in thickness for even cooking. If the carrots are too thin, they will overcook while thick ones will not cook through by the time the bacon crisps. 

Use thin sliced bacon

Thin sliced bacon crisps up more easily and won’t overwhelm the carrots. Depending on the strength of your oven AND how much fat is on your bacon slices, bake time may vary. It may take 15-20 minutes longer than the suggested bake time for the bacon fat to render off and crisp u

Serve hot

Serve the bacon wrapped carrots while they are still warm to preserve their crispy texture. Prep ahead and bake same day! Keep warm in the oven before serving.

How to store leftovers.

While you can store leftovers in the refrigerator if needed, I do not recommend it. the combination of crispy bacon and tender carrots are best served fresh out of the oven. The natural moisture from the carrots can make the bacon soggy over time.

Ingredients
  

  • 10 carrots large size, peeled and trimmed
  • 10 slices thin cut bacon
  • 3 Tablespoons hot honey
  • fresh oregano and thyme for garnish
  • flaky sea salt for garnish

Instructions
 

Preheat the oven.

  • Set your oven to 375°F / 190°C. Line a baking tray with parchment paper and a baking rack on top.

Prepare the carrots.

  • Choose carrots that are similar in thickness and size. Peel and trim the ends off. If the carrots are thick, cut them in half lengthwise.
    Note: You can make as many or as little as you'd like. Just use equal amounts of bacon and carrots.
    10 carrots

Wrap in bacon.

  • Gently stretch out the bacon strip. Starting at the thick end, tightly wrap a slice of bacon around the carrot, slightly overlapping as you go. Place each wrapped carrot on the baking rack with the bacon seam side down, at least 1/2 inch APART to leave room for the bacon to get crispy - if they are too close, they will steam and take longer to crisp up.
    10 slices thin cut bacon

Bake.

  • Bake for 30 minutes, then flip and lightly brush all sides with hot honey. Continue baking for an additional 30-40 minutes until the bacon fat has rendered off. In the last 10 minutes, flip again and lightly brush again with hot honey. For extra crisp, broil each side for one minute at the very end but be mindful to avoid burning.
    Note: Depending on the strength of your oven and how much fat is on your bacon slices, bake time may vary. It may take 15-20 minutes longer than the suggested bake time for the bacon fat to render off and crisp up.
    Note: Use a tong to carefully flip the bacon to reduce unwrapping.
    3 Tablespoons hot honey, fresh oregano and thyme
  • Remove from the oven and garnish with fresh oregano, thyme and sea salt. Best served hot. Keep warm in the oven until ready to serve. Be mindful of the hot bacon grease in the bottom of the pan.

We tested this recipe for Thanksgiving and wow!! It sounds like such a simple recipe because it is but the flavor was so delicious! The hot honey glaze is genius.
