Hot Honey Bacon Wrapped Carrots

Hot Honey Bacon Wrapped Carrots are the perfect side dish for any occasion. The natural sweetness of the roasted carrots pairs perfectly with the salty, crispy bacon and glazed with hot honey until caramelized. This dish will compliment everything on your holiday table this year.

Ingredients
  

  • 10 carrots large size, peeled and trimmed
  • 10 slices thin cut bacon
  • 3 Tablespoons hot honey
  • fresh oregano and thyme for garnish
  • flaky sea salt for garnish

Instructions
 

Preheat the oven.

  • Set your oven to 375°F / 190°C. Line a baking tray with parchment paper and a baking rack on top.

Prepare the carrots.

  • Choose carrots that are similar in thickness and size. Peel and trim the ends off. If the carrots are thick, cut them in half lengthwise.
    Note: You can make as many or as little as you'd like. Just use equal amounts of bacon and carrots.

Wrap in bacon.

  • Gently stretch out the bacon strip. Starting at the thick end, tightly wrap a slice of bacon around the carrot, slightly overlapping as you go. Place each wrapped carrot on the baking rack with the bacon seam side down, at least 1/2 inch APART to leave room for the bacon to get crispy - if they are too close, they will steam and take longer to crisp up.

Bake.

  • Bake for 30 minutes, then flip and lightly brush all sides with hot honey. Continue baking for an additional 30-40 minutes until the bacon fat has rendered off. In the last 10 minutes, flip again and lightly brush again with hot honey. For extra crisp, broil each side for one minute at the very end but be mindful to avoid burning.
    Note: Depending on the strength of your oven and how much fat is on your bacon slices, bake time may vary. It may take 15-20 minutes longer than the suggested bake time for the bacon fat to render off and crisp up.
    Note: Use a tong to carefully flip the bacon to reduce unwrapping.
    3 Tablespoons hot honey, fresh oregano and thyme
  • Remove from the oven and garnish with fresh oregano, thyme and sea salt. Best served hot. Keep warm in the oven until ready to serve. Be mindful of the hot bacon grease in the bottom of the pan.
