1large yellow oniondiced
1 Tablespoonolive oil
3Tablespoonsbutterunsalted

Instructions
Add butter, shallots and onions to a skillet or large pan. Cook on low heat for 35-40 minutes until deep golden brown. Stir frequently. Patience here will get you everything.
Once the onions are caramelized, bring a large pot of salted water to boil. Cook pasta per package instructions. Rinse quickly with cold water, drain and add cooked pasta, feta crumbles, and parsley to the pan of caramelized onions.
