Caramelized Onion and Feta Pasta

This one is for my feta lovers.

Most parents cook Mac and Cheese for their little ones, my mama made us onion pasta. Caramelized onion and Feta Pasta is a delightful, humble dish with a savory blend of caramelized onions and tanginess of feta cheese. Slowly cooked until golden, onions release natural sugars, intensifying the taste and overall palate of this simple dish. We always make this using small pasta shapes like orzo, pastina or mini farfalle. It somewhat feels lighter that way.

What are caramelized onions?

If you’ve ever had an In-N-Out burger Animal Style, you know exactly just how good it is and I’m not only talking about the sauce. Caramelized onions are a delicious, sweet and savory condiment made by simply cooking onions over low heat until they turn golden brown and develop a rich, sweet flavor. How to make caramelized onions.

Cut the onions

Cut the onions into small, diced pieces. Cutting them smaller speeds up the cooking process. 

Cook the onions

Melt butter and heat oil in a heavy-bottomed pot or skillet. Add onions to the pan. Cook slowly over medium-low heat, stirring frequently. 

Caramelized perfection

Be patient as the onions cook. Stir frequently to prevent burning. They caramelize from the natural sugars released during the cooking process.

How to serve this pasta.

This is not your traditional creamy pasta recipe. This caramelized onion and feta pasta is remnant of a cold pasta salad. Think spring and summertime. You can enjoy it warm but its best served cold. Enjoy on the side with grilled chicken and a fresh salad.

Storing leftovers.

Transfer leftovers to an airtight container in the refrigerator. Consume within 2-3 days. Best served cold. Reheat in microwave at 15 second intervals or on the stovetop until warm.

Ingredients
  

  • 16 ounces dry pasta small shapes like orzo, mini farfalle or stelline
  • 2 cups feta crumbled
  • 4 whole shallots diced
  • 1 large yellow onion diced
  • 1 Tablespoon olive oil
  • 3 Tablespoons butter unsalted
  • 1/2 teaspoon cracked black pepper and sea salt to taste
  • 2 garlic cloves pressed
  • 1/2 bunch of fresh parsley

Instructions
 

  • Add butter, shallots and onions to a skillet or large pan. Cook on low heat for 35-40 minutes until deep golden brown. Stir frequently. Patience here will get you everything.
    4 whole shallots, 1 large yellow onion, 1 Tablespoon olive oil, 3 Tablespoons butter, 2 garlic cloves
  • Once the onions are caramelized, bring a large pot of salted water to boil. Cook pasta per package instructions. Rinse quickly with cold water, drain and add cooked pasta, feta crumbles, and parsley to the pan of caramelized onions.
    16 ounces dry pasta, 2 cups feta, 1/2 bunch of fresh parsley
  • Toss to combine all the ingredients together. Finish it off with a drizzle of olive oil. Add cracked black pepper and sea salt to taste.
