Caramelized Onion and Feta Pasta

This one is for my feta lovers.

Most parents cook Mac and Cheese for their little ones, my mama made us onion pasta. Caramelized onion and Feta Pasta is a delightful, humble dish with a savory blend of caramelized onions and tanginess of feta cheese. Slowly cooked until golden, onions release natural sugars, intensifying the taste and overall palate of this simple dish. We always make this using small pasta shapes like orzo, pastina or mini farfalle. It somewhat feels lighter that way.

Why you'll love my recipe.

Rich, balanced flavors

The contrast of the sweet caramelized onions, tangy feta cheese and refreshing parsley creates an overall well-rounded, satisfying dish.

Easy meal prep

This recipe is a great make ahead option and there’s no need for re-heating. It actually tastes even better chilled.

What are caramelized onions?

If you’ve ever had an In-N-Out burger Animal Style, you know exactly just how good it is and I’m not only talking about the sauce. Caramelized onions are a delicious, sweet and savory condiment made by simply cooking onions over low heat until they turn golden brown and develop a rich, sweet flavor. It adds depth and complexity to a wide range of recipes. If you like caramelized onions, you’re going to love my One-Pot French Onion Pasta.

Ingredient notes.

Onions

Yellow onions are sweeter when caramelized.

Shallots

Add more depth to the overall onion flavor.

Garlic

Everything is better with fresh garlic.

Feta

Feta is the star of this recipe. I would not substitute with other cheeses.

Pasta

Small pasta shapes make this pasta salad feel light. Go for smaller shapes like orzo or mini farfalle.

For the rest of the ingredients, please see the recipe index card below!

How to make caramelized onions.

Cut the onions

Cut the onions into small, diced pieces. Cutting them smaller speeds up the cooking process.

Cook the onions

Melt butter and heat oil in a heavy-bottomed pot or skillet. Add onions to the pan. Cook slowly over medium-low heat, stirring frequently.

Caramelized perfection

Be patient as the onions cook. Stir frequently to prevent burning. They caramelize from the natural sugars released during the cooking process.

What's the best type of pasta for this dish?

Small pasta makes this recipe delicate, light and easy to serve. Use pasta shapes like orzo, mini farfalle or shells.

How to serve this pasta.

This caramelized onion and feta pasta is remnant of a cold pasta salad. Think spring and summertime. You can enjoy it warm but its best served cold. Enjoy on the side with grilled chicken and a fresh salad.

Storing leftovers.

Transfer leftovers to an airtight container in the refrigerator. Consume within 2-3 days. Best served cold. Reheat in microwave at 15 second intervals or on the stovetop until warm.
