What is a Popover?
Popovers are a lovely mix between a Dutch baby pancake and a crepe. They are a light and hollow pastry made from an egg-based batter, similar to Yorkshire pudding. Popovers literally “pop over” and puff over the sides of the baking pan, creating the ultimate crispy exterior and custard-like soft interior.

Milk
Choose high-quality ingredients from brands you trust. The flavor of your recipe depends on it. I used Organic Valley Grass-Fed Whole Milk.
Flour
Eggs
Eggs bind the ingredients together. This recipe has not been tested without eggs.
Butter
Melted butter in the batter not only adds richness, moisture and flavor but it also helps prevent sticking during cooking. Softened butter is used to coat the sides of the muffin tins, ensuring the batter doesn’t stick during baking and rises to its full potential.
Sea salt
A pinch of sea salt for balance.

Prepare the muffin pan
Use softened butter to spread on all sides in each muffin cup. It not only adds flavor and crisps the edges but it also prevents sticking and allows the popovers to puff over to its highest potential.
Make the batter
Melt the butter in the microwave or on a stovetop. Heat the milk until warm to the touch. Then, combine all the ingredients together in a blender and mix on high for 30 seconds until smooth. Shop my exact Vitamix blender here. (Affiliate link)
Fill and bake
Fill each muffin tin about 3/4 of the way. It is important to follow the recipe directions to bake the popovers at a higher temperature and then lowering the oven temperature to finish cooking. Do not open the oven during baking or you risk deflating the pastry.
Best served immediately
Popovers do not have much flavor on their own. Enjoy it with butter or brush with melted butter and toss in cinnamon sugar. Best enjoyed fresh but they hold well at room temperature.
Why do popovers deflate and how can I prevent it?
Popovers are naturally very airy and thin. The batter is baked at a high temperature to create steam that causes the dramatic puffing. Make sure to butter the muffin tins, even if the pan is non-stick. If you open the oven during baking, you expose the oven to a draft, causing the popovers to deflate while baking.
Because we are making these popovers in a muffin pan, there is a chance once removed from the oven, they won’t hold their shape like a “true popover” but they are still fluffy, airy and so delicious!

Can I make popovers ahead of time?
Making popovers ahead of time can save effort during busy mornings or special events but it comes with some trade-offs. My easy popover recipe is fairly quick to make and we recommend making them the same day.
If you are short on time, you can prepare the batter ahead of time (ideally 1-6 hours) and place in the fridge to chill to allow to gluten to relax. You get the benefits of freshly baked popovers without needing to measure and mix during peak prep time.

Easy Popover Recipe

- 1½ cups warm whole milk
- 1½ cups bread flour, spooned, fluffed and leveled may substitute with all-purpose
- 3 large eggs, room temperature
- 3 Tablespoons unsalted butter, melted
- 3 Tablespoons unsalted butter, softened
- 1/4 teaspoon sea salt
For the cinnamon sugar butter:
- 1/2 cup softened butter
- 2 Tablespoons light brown sugar
- 1 teaspoon ground cinnamon
For the savory toppings:
- 1/4 cup freshly shredded cheddar
- 2 Tablespoons chives finely chopped
Instructions
- Preheat the oven to 425°F. Spread softened butter on the inside of a muffin tray. Make sure all the sides are coated well. Note: This is what helps the popovers reach their height and fluffy potential without sticking to the pan.3 Tablespoons unsalted butter, softened
- Heat up the milk until warm to the touch. Microwave at 15 second intervals or heat on the stovetop. Do not overheat. Eggs should be room temperature. This is very important! If you need to speed up this process, place the eggs in a bowl of very warm water. Change the water every few minutes until the eggs are no longer cold to the touch.Note: The texture of the popovers will be very custard-like and dense if the milk is not warm and eggs are not room temperature.1½ cups warm whole milk, 3 large eggs, room temperature, 1½ cups bread flour, spooned, fluffed and leveled, 3 Tablespoons unsalted butter, melted, 1/4 teaspoon sea salt
- In a blender, add wet ingredients first, then the dry ingredients. Blend on high for 30 seconds until smooth and bubbly. Note: I recommend weighing the flour and milk. It is important to not over-measure the flour in order to achieve a light and fluffy popover. For my recipes, the general rule is 1 cup flour = 120g.1/4 cup freshly shredded cheddar, 2 Tablespoons chives
- Evenly distribute the batter into 12 muffin pan cups. It should reach 3/4 the way in each cup. Divide the shredded cheese and chives on top of half of the popovers.
- Bake at 425°F for only 20 minutes, then TURN DOWN the temperature to 350°F and finish baking for 10 minutes. Turn off the oven, leave the oven door cracked open and leave the pan in the oven for another 10 minutes while it cools. Note: Because of the high temperature change, we want to give the popovers the best chance of not deflating. They will deflate more if you go immediately from hot to cold quickly.
- While the popovers are baking, make the cinnamon sugar butter. To a small bowl, add softened butter, sugar and cinnamon. Mix to combine.1/2 cup softened butter, 2 Tablespoons light brown sugar, 1 teaspoon ground cinnamon
